I’ve been in the catering world for a long time—since before Instagram was even a thing—and I can tell you this: good food is only half the story. Great catering is about planning, timing, and a whole lot of love. Whether it’s a wedding for 200 or a lunch drop-off for 10, here are five catering tips I swear by to keep things smooth, fresh, and unforgettable.
1. Timing Is Everything
If you’re early, you’re on time. If you’re on time, you’re late. I live by this. When we show up with food, it’s hot, it’s fresh, and it’s exactly when you expect it—sometimes a bit earlier just to set the vibe. No one wants cold pasta or a missing salad during speeches.
2. Know Your Crowd
Every event is different. A backyard baby shower needs a whole different energy (and menu) than a corporate meeting. We always ask about your guests—age range, dietary preferences, vibe—so we can tailor the menu and presentation. Gluten-free? Vegan? Grandma’s favorite pie? We got you.
3. Always Have a Backup Plan
We’re in L.A.—that means traffic, weather surprises, and last-minute changes. That’s why we plan for backups. Extra utensils, extra portions, even a portable burner if we need to reheat on site. It’s all about staying flexible.
4. Presentation Matters
People eat with their eyes first. We put as much thought into how our trays, platters, and serving stations look as we do into how everything tastes. Clean lines, vibrant colors, garnishes that pop—it all adds up to an experience, not just a meal.
5. Clean Up Like You Were Never There
Nothing makes me prouder than when a host tells us, “I didn’t have to lift a finger.” After everyone’s full and happy, we tidy up like ninjas. No mess, no stress—you get to enjoy your event to the very end.
